The corn variety is known as Wapsie Valley and we source it from Esh Farm, an Amish farm committed to chemical-free grains and located in Rebersburg, PA.
While our other cornmeal products are as fine as flour, with this offering we mill the corn on a coarser grind. With this coarser grind, you can make some of your favorite dishes, including, of course, polenta!
