A 9x9 inch slab of bubbly, golden dough generously dimpled with extra virgin olive oil. We use high-hydration dough to ensure a remarkably airy, open crumb with a crisp, fried bottom.
Serves: 6–8 people.
Serving Tip: Flash it in a hot oven for 5 minutes before serving to wake up the olive oil and crisp the crust.
